It is important to let this mix sit in your fridge overnight with plastic wrap stretched over the top for the first night after mixing it up. Then, the next morning, drain all of the excess juice out. The next morning, the aroma is so pungent like onions, garlic and just the smells of fresh veggies! Mmmm…yummy!

We all love fresh veggies & the smell of garlic, onions and chopped Cilantro. There is a certain aroma that is produced by this particular mixture of organic vegetables, when in season. All of these ingredients are available all year-around from most grocery stores or your favorite neighborhood shopping mart.

Lets start with a sharp knife and the following items:

  • 6 plump (medium firmness) Roma tomatoes
  • 3 white sweet onions
  • 1 bunch of fresh Cilantro
  • 2 regular jalapeno peppers
  • 2 tsp salt – Bahia brand
  • 5 cloves of garlic – fresh
  • 2 fresh limes – squeezed into the mixing bowl by hand after cutting into quarters
  • 1 fresh lemon – squeezed into the mixing bowl

Let us share with you that the way we prepare this dish is to start at the top of the list and begin cutting up the Roma tomatoes. It helps to have a very sharp knife before you begin. We specify Roma tomatoes because they are typically a bit more firm which makes it much easier to slice them up without ruining the vegetables.

This garlic clove has many, many cloves on it. Our recipe calls for only 5 cloves. If you use too many cloves, it makes the salsa too strong tasting.

So as each ingredient is added to the mix, we suggest stirring the contents of the bowl with a medium wooden spoon. For those of us who have issues with Hypertension, or High Blood Pressure, we suggest using chips that are salt free.

We always recommend checking with your doctor if you are at risk for heart disease, diabetes or ESRD (End Stage Renal Disease) before eating any recipe including salt products. Sometimes, our taste buds overcome our sense of what are the best foods for us to eat.
